A day in the life of Latisha Daring '96, Vegan Restaurateur

Latisha Daring was a successful corporate manager for a luxury retail brand in Manhattan when she traded it all in to open Greedi Vegan, her Brooklyn-based restaurant focused on dishing up vegan fare that, she says, "tastes like your Grandma's, but healthy!"  Soul food staples such as chicken and waffles, fish and grits with country gravy, even biscuits and BBQ ribs — all vegan — reflect more than just the down-home roots and cooking skills she inherited from her grandparents; it also embodies Daring's ethos of comfort food. "I love being able to feed my community and give them a space where we can commune over healthy food," says the former political science major, who counts gospel superstar Yolanda Adams and New York City Mayor Eric Adams as patrons. UAlbany Magazine stepped into the kitchen with Daring to see how she conjures her culinary creations.

UAlbany is a family affair: Daring graduated in 1996 and her daughter, Ashtyn, is currently a freshman.
